A short-grain rice that turns slightly sticky and holds its moisture when cooked, perfect for restaurant-quality sushi at home. Full flavoured, nutty and filling, it's also great in poke bowls, rice balls and rice pudding. Grown in the Riverina, NSW, by farmers who use sustainable water and farming practices. This is the Opus variety, unique to Australia.

How to cook

Rinse 1 cup of rice in cold water. Add it to a saucepan with 1.5 cups of water and bring to the boil. Reduce the heat, cover and simmer for 15 minutes, then take off the heat and stand for 5 minutes. In a rice cooker, use the same 1 cup rice to 1.5 cups water.
